Apple & Blackberry Cake

Yesterday we couldn’t continue our journey because a tree was blocking the canal so I went out foraging and came back with some apples & blackberries. The apples tasted quite a bit like golden delicious !

We have run out of biscuits (amongst many other things !) so I decided to make a cake……. This is a bit of a made up recipe based on some measured quantities and some “handfuls”….

  • 6oz Butter
  • 6oz Soft Brown Sugar
  • 6oz Self Raising Flour
  • 3 Eggs
  • 2 small apples cut in to small chunks
  • 2 handfuls blackberries

I have my Magimix food processor on board so I used that to mix it all up. I started with the butter & sugar then added the flour & eggs. When that was well mixed I added the apple & blackberries with just enough time to mix it rather than pulverise it !

This all then went in to a 2lb loaf tin that I had lined with greaseproof paper (mainly to cut down on the washing up !). It was baked in my rather temperamental gas oven at about 180C for 35 mins turning the tin half way and sitting it on top of a baking tray with a grid on it to stop the bottom burning (my oven always seems to do this !!)

The cake turned out rather well and it has gone down very well while we have been sitting in the boat waiting for the rain to stop and the fallen tree to be cleared 🙂
